  • 4 large Russet potatoes
  • 1 liter Vegetable oil
  • 2 teaspoons Salt
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel the russet potatoes and cut them into sticks approximately 1/4 inch thick.

Step 2

Place the potato sticks in a large bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch, which helps in achieving crispiness.

Step 3

After soaking, drain the potatoes and pat them dry with paper towels to remove any excess moisture.

Step 4

Heat the vegetable oil in a deep fryer or a large heavy-bottomed pot over medium-high heat until it reaches 325°F (165°C). Use a thermometer for accurate measurement.

Step 5

Fry the potatoes in batches to avoid overcrowding the pot. Fry them for about 3-4 minutes, just until they are soft and pale. This is the first fry which will cook them through. Remove with a slotted spoon and drain on paper towels.

Step 6

Increase the oil temperature to 375°F (190°C).

Fry the potatoes a second time in batches for another 3-4 minutes, until they are golden brown and crispy.

Remove the fries with a slotted spoon and drain on paper towels. Immediately season with salt, paprika, garlic powder, and black pepper while still hot, tossing to coat evenly.
