Ingredients

  • 4 medium Russet potatoes
  • 1 medium Yellow onion
  • 1 medium Bell pepper
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Fresh parsley

Directions

Step 1

Peel the potatoes and cut them into 1/2 inch cubes for even cooking.

Step 2

Place the potato cubes in a large pot, cover them with water, and add a pinch of salt. Bring to a boil over medium-high heat and cook for about 5-7 minutes, or until slightly tender but not fully cooked. Drain the potatoes and set aside.

Meanwhile, peel and dice the onion and cut the bell pepper into small pieces.
