Ingredients

  • 4 pieces chicken thighs
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 pieces eggs
  • 2 cups vegetable oil
  • 1 cup pineapple chunks (canned, drained)
  • 1 cup pineapple juice (reserved from canned pineapple)
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 3 tablespoons honey
  • 2 tablespoons ketchup
  • 1 tablespoon cornstarch (for sauce)
  • 2 tablespoons water (for cornstarch slurry)
  • 2 stalks green onions (for garnish)
  • 1 tablespoon sesame seeds (optional, for garnishing)

Directions

Step 1

Pat the chicken thighs dry with paper towels and cut them into bite-sized pieces.

Step 2

In a large bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, and garlic powder.

Step 3

In another bowl, beat the eggs.

Step 4

Dip each piece of chicken into the eggs and then dredge it in the flour mixture, ensuring each piece is well-coated. Place coated chicken on a plate.

Step 5

In a deep skillet or pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Step 6

Carefully fry the chicken pieces in batches, making sure not to overcrowd the pan. Cook for 4-5 minutes per batch until golden brown and crispy. Remove the chicken and place it on a wire rack or paper towels to drain excess oil.

Step 7

While the chicken cooks, make the Hawaiian sauce. In a medium saucepan, combine the pineapple juice, soy sauce, rice vinegar, honey, and ketchup. Stir and bring to a boil over medium heat.

Step 8

In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Gradually add this slurry to the sauce while stirring until it thickens, about 1-2 minutes.

Step 9

Add the pineapple chunks to the sauce and lower the heat to a simmer.

Step 10

Once all the chicken is fried, toss the crispy chicken pieces in the sauce until evenly coated.

Step 11

Serve the chicken hot, garnished with chopped green onions and sesame seeds if desired. Pair with steamed rice or sautéed vegetables for a complete meal.
