Ingredients

  • 1 medium-sized Zucchini
  • 2 medium-sized Carrots
  • 1 medium-sized Bell pepper (red or yellow)
  • 1 cup Sweet corn kernels
  • 1 cup All-purpose flour
  • 1/4 cup Cornstarch
  • 1 teaspoon Baking powder
  • 1 large Egg
  • 1/2 cup Milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Garlic powder
  • 2 tablespoons Chopped fresh parsley
  • 1 cup Vegetable oil

Directions

Step 1

Grate the zucchini and carrots using a box grater or food processor and place them in a large bowl.

Finely chop the bell pepper and add it to the bowl along with the corn kernels.

In a separate bowl, whisk together the all-purpose flour, cornstarch, and baking powder.
