Ingredients

  • 500 grams Fresh squid
  • 100 grams All-purpose flour
  • 50 grams Cornstarch
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Paprika
  • 1 large Egg
  • 150 milliliters Cold sparkling water
  • 500 milliliters Vegetable oil
  • 1 whole Lemon wedges
  • 2 tablespoons Fresh parsley

Directions

Step 1

Clean the squid by removing the head and innards. Peel off the thin skin and wash thoroughly. Cut the body into 1 cm wide rings.

Step 2

Pat the squid rings dry with paper towels to remove excess moisture, which helps in achieving a crispy texture.

Step 3

In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika.

Step 4

In another bowl, beat the egg and mix in the cold sparkling water to create a smooth, light batter.

Step 5

Gradually add the dry flour mixture to the wet ingredients, stirring gently to avoid lumps. The consistency should be similar to a pancake batter.

Step 6

Heat the vegetable oil in a deep frying pan over medium-high heat until it reaches 180°C (350°F) or when a drop of batter sizzles and rises to the surface immediately.

Step 7

Dip the squid rings into the batter, ensuring they are fully coated, and carefully place them into the hot oil in batches. Avoid overcrowding the pan.

Step 8

Fry the squid rings for 2-3 minutes or until golden and crispy. Use a slotted spoon to transfer them to a plate lined with paper towels to drain excess oil.

Step 9

Repeat the frying process with the remaining squid rings.

Step 10

Serve the crispy squid rings warm with lemon wedges and a sprinkle of fresh parsley for garnish.
