Ingredients

  • 8 pieces Chicken thighs
  • 500 ml Buttermilk
  • 2 tablespoons Salt
  • 1 tablespoon Black pepper
  • 1 tablespoon Garlic powder
  • 1 tablespoon Paprika
  • 1 tablespoon Onion powder
  • 300 grams All-purpose flour
  • 50 grams Cornstarch
  • 1 teaspoon Baking powder
  • 1000 ml Vegetable oil

Directions

Step 1

In a large mixing bowl, combine the buttermilk with 1 tablespoon of salt, 1 teaspoon of black pepper, and half of the garlic powder.

Step 2

Add the chicken thighs to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours or overnight for best results.

Step 3

In another bowl, mix the flour, cornstarch, remaining salt, black pepper, garlic powder, paprika, onion powder, and baking powder.

Step 4

Remove the chicken thighs from the buttermilk, allowing any excess to drip off, and coat them thoroughly in the flour mixture. Shake off any excess flour and set aside on a tray.

Step 5

In a deep skillet or Dutch oven, heat the vegetable oil to 350°F (175°C). Use a kitchen thermometer to ensure the oil maintains a consistent temperature.

Step 6

Carefully add the chicken thighs to the hot oil, a few pieces at a time to not overcrowd the skillet.

Step 7

Fry for about 12-15 minutes, turning occasionally, until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (74°C).

Step 8

Remove the chicken thighs from the oil and place them on a wire rack to drain any excess oil. Let them rest for a few minutes before serving.

Step 9

Serve hot and enjoy your perfectly crispy fried chicken thighs.
