Ingredients

  • 500 grams Fresh squid, cleaned and cut into rings
  • 100 grams All-purpose flour
  • 50 grams Cornstarch
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Garlic powder
  • 2 large Eggs
  • 60 ml Cold water
  • 500 ml Vegetable oil, for frying

Directions

Step 1

In a large bowl, combine the flour, cornstarch, baking powder, salt, black pepper, paprika, and garlic powder.

Step 2

In a separate bowl, whisk together the eggs, lemon juice, and cold water to create a smooth batter.

Step 3

Heat the vegetable oil in a deep fryer or a large deep skillet to a temperature of 180°C (350°F).

Step 4

Dip the squid rings into the flour mixture, shake off any excess, and then dip them into the egg mixture, ensuring they are well coated.

Step 5

Once coated, dredge the squid again in the flour mixture to ensure a crispy coating.

Step 6

Carefully place the coated squid rings into the hot oil, frying in batches to avoid overcrowding. Fry for 2-3 minutes or until golden brown and crisp.

Step 7

Use a slotted spoon to remove the fried squid from the oil, and drain on a plate lined with paper towels.

Step 8

Serve immediately while hot, with lemon wedges and your favorite dipping sauce.
