Ingredients

  • 1.5 cups semi-sweet chocolate chips
  • 1 cup unsweetened shredded coconut
  • 2 cups crispy rice cereal
  • 1 cup mini chocolate eggs or candy-coated almonds
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Directions

Step 1

Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a dry skillet over medium heat, toast the shredded coconut for 3-5 minutes, stirring frequently, until lightly golden and fragrant. Transfer to a plate to cool.

Step 3

In a heatproof bowl, add the semi-sweet chocolate chips and butter. Melt the chocolate and butter together using a double boiler or microwave in 30-second increments, stirring in between until smooth and fully melted.

Step 4

Stir the vanilla extract into the melted chocolate mixture.

Step 5

In a large mixing bowl, combine the crispy rice cereal and toasted coconut. Pour the melted chocolate mixture over the top and gently fold together until the cereal and coconut are well coated in chocolate.

Using a spoon, drop heaping tablespoons of the mixture onto the prepared baking sheet, shaping each mound into a small 'nest' with an indentation in the center.
