Ingredients

  • 2 pieces chicken breast fillets
  • 250 ml buttermilk
  • 150 g all-purpose flour
  • 50 g cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper
  • 1 tsp salt
  • 500 ml vegetable oil
  • 2 pieces burger buns
  • 4 pieces lettuce leaves
  • 1 medium tomato
  • 4 tbsp mayonnaise
  • 6 pieces pickle chips

Directions

Step 1

Place chicken breast fillets in a plastic bag with the buttermilk, seal it, and marinate in the refrigerator for at least 1 hour or overnight for best results.

Step 2

In a shallow dish, mix together the flour, cornstarch, paprika, garlic powder, onion powder, black pepper, and salt.

Step 3

Remove the chicken from the buttermilk, allowing excess to drip off, then dredge each fillet in the flour mixture, ensuring it's well-coated. Press gently to adhere the flour mix.

Step 4

Heat vegetable oil in a large pan or deep fryer to 180°C (350°F).

Step 5

Carefully place the coated chicken fillets in the hot oil and fry for 5-6 minutes on each side, or until golden brown and cooked through to an internal temperature of 75°C (165°F).

Step 6

Remove chicken and place on a wire rack or paper towels to drain excess oil.

Step 7

Lightly toast the burger buns in a dry pan or toaster.

Step 8

Spread mayonnaise on the bottom half of each bun.

Step 9

Layer the lettuce leaves, crispy chicken fillet, and a couple of slices of tomato on top of the mayo.

Step 10

Add pickle chips for an extra tangy crunch if desired.

Step 11

Top with the other half of the bun and serve immediately.
