Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 cup All-purpose flour
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 cloves Garlic cloves, minced
  • 0.5 cup Chicken stock
  • 0.25 cup Fresh lemon juice
  • 2 tablespoons Capers, drained
  • 1 tablespoon Fresh parsley, chopped

Directions

Step 1

Place each chicken breast between two pieces of plastic wrap and pound to an even thickness, about 1/2 inch thick, using a meat mallet or rolling pin.

Step 2

Season both sides of the chicken breasts with salt and black pepper.

Step 3

Dredge each chicken breast in all-purpose flour, shaking off the excess.

Step 4

Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat.
