Ingredients

  • 15 oz (1 can) black beans
  • 1 medium-sized red bell pepper
  • 1 medium-sized yellow onion
  • 2 cloves garlic cloves
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp lime juice
  • 1 cup shredded cheddar cheese
  • 6 medium-sized flour tortillas
  • 2 tbsp olive oil
  • 1 optional optional toppings (sour cream, salsa, avocado, etc.)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Drain and rinse the black beans, then set them aside.

Step 3

Dice the red bell pepper and yellow onion into small pieces. Mince the garlic cloves.

Step 4

Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.
