Ingredients

  • 6 slices bacon
  • 200 grams cremini mushrooms
  • 2 tablespoons olive oil
  • 150 grams mixed salad greens
  • 150 grams cherry tomatoes
  • 0.5 unit red onion, thinly sliced
  • 1.5 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 30 grams parmesan cheese, shaved

Directions

Step 1

Heat a large skillet over medium heat. Cook the bacon slices until crispy, about 6-8 minutes, flipping occasionally. Transfer the cooked bacon to a plate lined with paper towels to drain and cool. Once cooled, crumble the bacon into bite-sized pieces and set aside.

Step 2

While the skillet is still warm, remove excess grease, keeping about 1 tablespoon in the pan. Alternatively, you can discard all the grease and add 1 tablespoon of olive oil. Add the mushrooms to the skillet and sauté for 5-7 minutes until golden and tender. Remove from heat and set aside.

Step 3

In a small bowl, whisk together balsamic vinegar, honey, Dijon mustard, salt, pepper, and the remaining olive oil to create the dressing. Adjust seasoning to taste if needed.

Step 4

Assemble the salad by placing the mixed salad greens in a large bowl. Add the cherry tomatoes, red onion slices, sautéed mushrooms, and crumbled bacon.

Step 5

Drizzle the salad with the prepared dressing and toss gently to combine all ingredients evenly.

Step 6

Top the salad with shaved parmesan cheese as garnish and serve immediately.
