  • 500 g Calf liver
  • 100 g All-purpose flour
  • 1 tsp Salt

  • 0.5 tsp Paprika
  • 4 tbsp Unsalted butter
  • 2 tbsp Olive oil
  • 2 cloves Garlic cloves, minced
  • 2 tbsp Lemon juice
  • 2 tbsp Fresh parsley, chopped
  • 1 tsp Lemon zest

Directions

Step 1

Rinse the calf liver under cold water and pat dry with paper towels. Trim any connective tissue or veins, and slice into thin, even pieces if not pre-sliced.

Step 2

In a shallow dish, combine the all-purpose flour, salt, black pepper, and paprika.

Step 3

Dredge each piece of calf liver in the flour mixture, ensuring an even coating on all sides. Shake off any excess flour.

Step 4

In a large skillet, heat 2 tablespoons of unsalted butter with 2 tablespoons of olive oil over medium-high heat until the mixture foams but does not brown.

Step 5

Place the liver slices in the hot skillet in a single layer, being careful not to overcrowd the pan. Cook for 2-3 minutes on each side, or until the outside is golden and crisp.
