Ingredients

  • 4 cups (shredded) Green cabbage
  • 2 cups (shredded) Red cabbage
  • 2 large (julienned or shredded) Carrots
  • 1 medium (thinly sliced) Red bell pepper
  • 3 stalks (finely chopped) Green onion
  • 0.25 cup (chopped) Fresh parsley
  • 0.5 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a large mixing bowl, combine the green cabbage, red cabbage, carrots, red bell pepper, green onion, and parsley. Toss to mix evenly.

Step 2

In a separate smaller bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and black pepper. This will form the dressing.

Step 3

Pour the dressing over the vegetable mixture in the large bowl.

Step 4

Using a pair of tongs or a large spoon, thoroughly toss the salad so that the dressing coats all the vegetables evenly.

Step 5

Let the salad sit for at least 15 minutes to allow the flavors to meld together. Alternatively, cover and refrigerate for up to 2 hours for an even more pronounced flavor.

Step 6

Before serving, give the salad one more quick toss. Garnish with additional parsley if desired.

Step 7

Serve chilled as a refreshing side dish.
