  • 7 large Eggs

  • 0.5 cup Crumbled feta cheese

  • 1 cup Cherry tomatoes
  • 2 tablespoons Fresh cilantro
  • 0.25 cup Red onion
  • 1 tablespoon Lime juice
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium mixing bowl, whisk together the flour, milk, 2 eggs, melted butter, and a pinch of salt until smooth. Set the crepe batter aside to rest for 10 minutes.

Heat a non-stick skillet over medium heat and lightly grease with butter or oil. Pour 1/4 cup of the crepe batter into the skillet, tilting it to spread the batter evenly. Cook for 1-2 minutes until the edges begin to lift, then flip and cook for another 30 seconds. Repeat with the remaining batter to make about 8 crepes. Set aside on a plate and keep warm.
