Wash the dried red beans thoroughly and soak them in 6 cups of water overnight, or for at least 8 hours. Drain and set aside.
In a large pot or Dutch oven, heat olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
In the same pot, add diced onion, green bell pepper, and celery. Cook until softened, about 5 minutes.
Add minced garlic to the pot and sauté for 1 minute, or until fragrant.
Stir in smoked paprika, dried thyme, cayenne pepper, dried oregano, and the bay leaf. Cook for 30 seconds to toast the spices.
Add the soaked and drained beans, chicken broth, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer, partially covered, for 60-75 minutes, stirring occasionally. Cook until the beans are tender.
While the beans are simmering, cook the white rice according to the package instructions. Set aside and keep warm.
Once the beans are tender, return the browned sausage to the pot and simmer for an additional 10 minutes. Adjust seasoning with more salt, pepper, or hot sauce as desired.
