Ingredients

  • 6 cups fresh spinach
  • 1 cup cherry tomatoes
  • 1 red bell pepper

  • 2 links cooked andouille sausage
  • 2 hard-boiled eggs
  • 2 tablespoons creole mustard
  • 3 tablespoons olive oil
  • 1.5 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 stalks green onions

Directions

Step 1

Wash and dry the fresh spinach thoroughly, then transfer it to a large salad bowl.

Step 2

Halve the cherry tomatoes and slice the red bell pepper into thin strips. Add both to the bowl with the spinach.

Thinly slice the red onion and add to the salad bowl.
