Ingredients

  • 8 oz spaghetti
  • 2 tbsp olive oil
  • 12 oz andouille sausage, sliced
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic, minced
  • 1.5 tbsp cajun seasoning
  • 28 oz crushed tomatoes
  • 0.5 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 1 cup mozzarella cheese, shredded
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the spaghetti in a large pot of salted boiling water until al dente according to package instructions. Drain and set aside.

In a large skillet over medium heat, heat the olive oil. Add the sliced andouille sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
