  • 2 leaves Bay leaves
  • 2 tablespoons Creole seasoning
  • 0.25 teaspoons Cayenne pepper (optional, for extra heat)
  • 1 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 3 tablespoons Fresh parsley, chopped (for garnish)
  • 4 cups Cooked white rice (optional, for serving)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the sliced andouille sausage and cook for 4–5 minutes until browned. Remove the sausage and set aside.

In the same pot, add the remaining 1 tablespoon of olive oil. Add the chopped onion, diced bell pepper, diced celery, and a pinch of salt. Sauté the vegetables for 5–7 minutes until softened.
