  • 4 pieces Red snapper fillets
  • 2 tablespoons Olive oil

  • 1 14-ounce can Diced tomatoes
  • 2 tablespoons Tomato paste
  • 2 tablespoons Creole seasoning
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried thyme
  • 0.5 teaspoons Cayenne pepper
  • 1 cup Chicken broth
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Lemon juice
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Pat the red snapper fillets dry with paper towels, then season both sides with a pinch of salt, black pepper, and 1 tablespoon of Creole seasoning. Set aside.

Step 2

In a large skillet, heat olive oil over medium-high heat. Add the red snapper fillets to the pan, skin-side down if applicable, and sear for 2-3 minutes on each side until golden brown. Remove the fillets from the skillet and set aside on a plate.

Step 3

Lower the heat to medium and add the butter to the skillet. Once melted, sauté the chopped onion, minced garlic, diced green bell pepper, and chopped celery for 5-7 minutes, or until the vegetables are soft and fragrant.
