  • 2 stalks green onions

Directions

Step 1

Peel and cube the potatoes into bite-sized pieces; dice the onion, green bell pepper, and celery; mince the garlic; and chop the parsley and green onions for garnish.

Heat the olive oil in a large pot over medium heat. Add the diced onion, green bell pepper, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
