  • 1 tsp Dried thyme
  • 1 tsp Paprika
  • 1 tsp Hot sauce
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 Green onions, sliced (for garnish)
  • 2 tbsp Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large, deep skillet or Dutch oven over medium heat.

Step 2

Add the sliced andouille sausage and cook for 3-4 minutes, stirring occasionally, until browned. Remove the sausage and set aside.

Step 3

Add the remaining tablespoon of olive oil to the skillet. Add the diced onion, green bell pepper, and celery. Cook for 5 minutes, stirring frequently, until the vegetables are softened.

Stir in the minced garlic, Cajun seasoning, dried thyme, and paprika. Cook for 1 minute, until fragrant.
