  • 2 bay leaves
  • 2 scallions, sliced (for garnish)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Slice the andouille sausage into rounds and brown them in the pot for 5-7 minutes, then remove and set aside.
