Ingredients

  • 1 pound fresh green beans
  • 4 ounces andouille sausage
  • 1 tablespoon olive oil
  • 1 medium yellow onion
  • 2 small garlic cloves
  • 1 cup diced tomatoes
  • 1.5 teaspoons creole seasoning
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon cayenne pepper
  • 0.5 cup chicken broth
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Wash and trim the ends of the green beans, then set them aside.

Step 2

Slice the andouille sausage into thin rounds.

Step 3

Finely dice the yellow onion and mince the garlic cloves.

Step 4

In a large skillet or sauté pan, heat the olive oil over medium heat.

Step 5

Add the sliced sausage to the pan and cook for 3-4 minutes until browned and slightly crispy. Remove the sausage from the pan and set aside.

Step 6

In the same skillet, add the diced onions and cook for 4 minutes until softened and translucent.

Step 7

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 8

Add the green beans to the skillet and sauté for 5 minutes, stirring occasionally.

Step 9

Stir in the diced tomatoes, Creole seasoning, smoked paprika, and cayenne pepper. Mix well to combine.

Step 10

Pour in the chicken broth, bring the mixture to a simmer, and cover the skillet with a lid. Cook for an additional 5 minutes or until the green beans are tender but still slightly crisp.

Step 11

Remove the lid, stir the sausage back into the skillet, and cook for 2 more minutes to allow the flavors to meld.

Step 12

Season with salt and black pepper to taste.

Step 13

Serve warm as a side dish and enjoy!
