Ingredients

  • 2 tablespoons olive oil
  • 1 pound lean beef stew meat
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery stalks, diced
  • 3 cloves garlic cloves, minced
  • 6 cups low-sodium beef broth
  • 1 14.5-ounce can canned no-salt-added diced tomatoes
  • 1 cup okra, sliced
  • 1 cup cooked brown rice
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon black pepper
  • 1 leaf bay leaf
  • 2 tablespoons parsley, chopped (optional garnish)

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.

Step 2

Add the beef stew meat to the pot and sear on all sides until browned, about 4-5 minutes. Remove the meat and set it aside.

Step 3

In the same pot, add the diced onion, bell pepper, and celery. Sauté for 5 minutes, or until softened.

Step 4

Add the minced garlic and cook for 1 minute, stirring frequently to avoid burning.

Step 5

Return the beef to the pot and pour in the low-sodium beef broth.

Step 6

Add the canned diced tomatoes (with their juices), sliced okra, smoked paprika, dried thyme, cayenne pepper, black pepper, and bay leaf. Stir everything to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer the soup for 70-75 minutes, stirring occasionally, until the beef is tender and flavors are well-developed.

Step 8

In the last 10 minutes, stir in the cooked brown rice and let it warm through.

Step 9

Taste the soup and adjust seasoning if needed, keeping in mind the low-salt intention.

Step 10

Remove the bay leaf before serving. Ladle the soup into bowls, garnish with chopped parsley if desired, and serve warm.
