Ingredients

  • 2 links Andouille sausage
  • 1 cup Quick-cook grits
  • 2 cups Whole milk
  • 1 cup Water
  • 1 cup Cheddar cheese, shredded
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Cajun seasoning
  • 1 tablespoon Vegetable oil
  • 4 Large eggs
  • 2 tablespoons Scallions, chopped
  • 1 teaspoon Hot sauce (optional)

Directions

Step 1

In a medium saucepan over medium heat, combine milk and water, and bring to a gentle simmer.

Step 2

Gradually stir in the quick-cook grits, stirring constantly to prevent lumps. Reduce heat to low and cook for 5 minutes or until thickened, stirring occasionally.

Step 3

Stir in shredded cheddar cheese, butter, salt, and black pepper until smooth and creamy. Keep warm on low heat.

Step 4

Heat a large skillet over medium-high heat. Add vegetable oil, and once hot, add sliced Andouille sausage. Cook for 2-3 minutes per side, until browned and slightly crispy. Remove sausage from the skillet and set aside.

Step 5

Using the same skillet, crack eggs one at a time and fry to your preferred level of doneness (sunny-side up is recommended). Remove eggs and set aside on a plate.

Step 6

To assemble, spoon a generous amount of cheese grits onto a serving plate. Arrange several slices of cooked Andouille sausage on top of the grits.

Step 7

Place a fried egg on top of the sausage layer. Sprinkle with chopped scallions and a pinch of Cajun seasoning for extra flavor.
