  • 1 tablespoon Creole seasoning
  • 1 teaspoon Dried thyme
  • 1 piece Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Long-grain white rice
  • 0.25 cup Green onions (for garnish)

Directions

Step 1

Rinse the dried black-eyed peas under cold water and check for debris.

Step 2

Slice the andouille sausage into thin rounds and set aside.

Step 3

Chop the celery, green bell pepper, and onion. Mince the garlic cloves.

Step 4

In a 6-quart Crock Pot, add the black-eyed peas, sliced sausage, celery, bell pepper, onion, and garlic.

Step 5

Pour in the chicken broth and canned diced tomatoes (including the juice).
