  • 1.5 pounds Beef sirloin tips
  • 1 teaspoon Kosher salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Cayenne pepper
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 1 medium Green bell pepper, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Tomato paste
  • 2 cups Beef broth
  • 14.5 ounces Diced tomatoes, canned (with juice)
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 leaf Bay leaf
  • 1 teaspoon Hot sauce
  • 2 tablespoons Scallions, sliced
  • 4 cups Cooked white rice

Directions

Step 1

Season the beef tips with kosher salt, black pepper, and cayenne pepper. Toss the meat with flour until evenly coated.

Step 2

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the beef tips in batches, searing them on all sides until browned. Remove the beef from the pan and set aside.

In the same pan, add the diced onion, green bell pepper, and celery. Sauté for 5-7 minutes, or until the vegetables are softened.
