Ingredients

  • 1.5 pounds Beef stew meat
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 1 medium Green bell pepper, diced
  • 2 Celery stalks, diced
  • 3 cloves Garlic, minced
  • 14.5 ounces Canned diced tomatoes
  • 2 tablespoons Tomato paste
  • 1.5 cups Beef broth
  • 1.5 tablespoons Creole seasoning
  • 0.25 teaspoons Cayenne pepper (optional, for extra spice)
  • 1 teaspoon Dried thyme
  • 2 Bay leaves
  • 1 tablespoon Worcestershire sauce
  • 4 cups Cooked white rice
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large Dutch oven or heavy pot over medium-high heat.

Step 2

Add the beef stew meat to the pot in a single layer, working in batches if necessary to avoid overcrowding. Sear the meat on all sides until browned, about 5-7 minutes. Remove the meat and set it aside.

Step 3

In the same pot, add the diced onions, green bell pepper, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened.

Step 4

Add the minced garlic and cook for an additional minute until fragrant.

Step 5

Stir in the diced tomatoes, tomato paste, and beef broth. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pot for added flavor.

Step 6

Return the seared beef to the pot and mix well.

Step 7

Stir in the Creole seasoning, cayenne pepper (if using), dried thyme, and Worcestershire sauce. Add the bay leaves to the pot.

Step 8

Bring the mixture to a simmer, then reduce the heat to low. Cover the pot with a lid and cook for 1 to 1.5 hours, stirring occasionally, until the beef is tender and the sauce has thickened.

Step 9

Remove the bay leaves from the pot and taste for seasoning. Adjust with additional salt or Creole seasoning if necessary.

Step 10

Serve the Creole beef over a bed of cooked white rice and garnish with fresh parsley.
