Ingredients

  • 2 whole avocados
  • 200 grams medium shrimp (peeled and deveined)
  • 2 tablespoons butter
  • 1 small, diced green bell pepper
  • 0.5 medium, finely chopped red onion
  • 2 cloves, minced garlic
  • 0.5 cup diced tomatoes (canned or fresh)
  • 1 tablespoon Creole seasoning
  • 1 tablespoon, chopped fresh parsley
  • 1 teaspoon (optional) hot sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon, freshly squeezed lemon juice

Directions

Step 1

Cut the avocados in half lengthwise and remove the pits. Carefully scoop out the flesh using a spoon, keeping the shells intact. Dice the avocado flesh and set it aside in a bowl.

In a skillet over medium heat, melt the butter. Add the diced green bell pepper and chopped red onion, sautéing for 2-3 minutes until softened.
