Ingredients

  • 2 cups Butternut squash, peeled and cubed
  • 1.5 cups Brussels sprouts, trimmed and halved

  • 1.5 tablespoons Maple syrup
  • 4 cups Mixed salad greens
  • 0.25 cup Diced red onion
  • 0.25 cup Dried cranberries
  • 1 tablespoon Creole mustard
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, toss the butternut squash and Brussels sprouts with 2 tablespoons of olive oil and the Creole seasoning until evenly coated.

Spread the vegetables in an even layer on the prepared baking sheet and roast for 20 minutes, stirring halfway through, or until tender and caramelized.
