  • 4 cups arugula

  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup, grated Parmesan cheese
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper
  • 0.25 teaspoon (optional) red pepper flakes
  • 2 tablespoons, chopped (optional, for garnish) fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, drain the pasta, and set aside.

While the pasta cooks, clean and slice the cremini mushrooms into thin slices.
