Ingredients

  • 2 sheets puff pastry sheets
  • 500 ml whole milk
  • 1 pod vanilla bean
  • 4 large egg yolks
  • 150 g granulated sugar
  • 50 g cornstarch
  • 50 g unsalted butter
  • 2 tablespoons powdered sugar

Directions

Step 1

Preheat your oven to 200°C (392°F).

Step 2

Place the puff pastry sheets on a baking sheet lined with parchment paper. Prick them all over with a fork to prevent them from puffing too much during baking.

Step 3

Bake the puff pastry sheets for 15 minutes or until they are golden brown and crisp. Remove from the oven and allow them to cool completely.

Step 4

In a saucepan, pour the milk. Slice the vanilla bean in half lengthwise, and scrape out the seeds. Add both the seeds and the pod to the milk.

Heat the milk until it just begins to simmer, then remove from heat and let the vanilla infuse for 10 minutes.

In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy. Add the cornstarch and whisk until smooth.

Remove the vanilla pod from the milk, then gradually pour the warm vanilla milk into the egg mixture, whisking continuously to prevent curdling.

Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a boil. Once thickened, remove from heat.

Stir in the unsalted butter until fully melted and the custard is smooth.

Allow the custard to cool slightly, then cover with plastic wrap directly on the surface to prevent a skin from forming. Let it cool to room temperature.

Place one sheet of puff pastry onto a serving platter. Spread the custard evenly over the pastry, then top with the second sheet of puff pastry.
