Ingredients

  • 1 cup Heavy cream
  • 2 tablespoons Granulated sugar (for custard)
  • 2 large Egg yolks
  • 0.5 teaspoon Vanilla extract
  • 2 teaspoons Granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 325°F (160°C).

Step 2

In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Do not let it boil. Remove it from the heat and let it cool slightly.

Step 3

In a medium mixing bowl, whisk together the egg yolks and 2 tablespoons of granulated sugar until the mixture becomes pale and slightly thickened.

Step 4

Slowly pour the warm heavy cream into the egg yolk mixture, whisking constantly to ensure the yolks do not curdle.

Stir in the vanilla extract until fully combined.

Step 6

Place two 6-ounce ramekins into a baking dish. Divide the custard mixture evenly between the ramekins.

Pour hot water into the baking dish around the ramekins, filling it to about halfway up the sides of the ramekins to create a water bath.

Carefully transfer the baking dish to the preheated oven and bake for 35-40 minutes, or until the edges of the custards are set but the centers still jiggle slightly when shaken.

Remove the ramekins from the water bath and let them cool to room temperature. Cover them with plastic wrap and refrigerate for at least 2 hours, or until fully chilled.
