Preheat your oven to 325°F (160°C).
In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Do not let it boil. Remove it from the heat and let it cool slightly.
In a medium mixing bowl, whisk together the egg yolks and 2 tablespoons of granulated sugar until the mixture becomes pale and slightly thickened.
Slowly pour the warm heavy cream into the egg yolk mixture, whisking constantly to ensure the yolks do not curdle.
