Ingredients

  • 1000 grams auyama (pumpkin)
  • 2 tablespoons olive oil
  • 1 medium, chopped onion
  • 3 cloves, minced garlic
  • 1000 milliliters vegetable broth
  • 250 milliliters milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg
  • 120 milliliters heavy cream

Directions

Step 1

Peel the pumpkin, remove the seeds, and cut it into small cubes.

Step 2

In a large pot, heat the olive oil over medium heat.

Step 3

Add the chopped onion and sauté until translucent, about 5 minutes.

Step 4

Add the minced garlic and cook for another 2 minutes, stirring frequently to prevent burning.

Step 5

Stir in the pumpkin cubes, and cook for 5 minutes, stirring occasionally.

Step 6

Pour in the vegetable broth and bring to a boil.

Step 7

Reduce the heat to low, cover, and simmer for about 20-25 minutes or until the pumpkin is tender when pierced with a fork.

Step 8

Once the pumpkin is tender, use an immersion blender to blend the soup directly in the pot until smooth. If using a countertop blender, blend in batches and return to the pot.

Step 9

Stir in the milk, salt, black pepper, and nutmeg. Simmer for an additional 5 minutes.

Step 10

Stir in the heavy cream and adjust seasoning if necessary.

Step 11

Serve hot, garnished with a drizzle of olive oil or additional cream if desired.
