Ingredients

  • 12 ounces rigatoni pasta
  • 2 medium zucchini
  • 4 cups baby spinach

  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rigatoni according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain the pasta and set aside.
