Ingredients

  • 2 tablespoons Olive oil
  • 1 medium, diced Yellow onion
  • 4 minced Garlic cloves
  • 2 chopped Celery stalks
  • 1 large, chopped Carrot
  • 4 cups Vegetable broth
  • 2 15-ounce cans Canned white beans (such as cannellini or great northern beans), rinsed and drained
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Dried rosemary
  • 1 whole Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Heavy cream (optional)
  • 2 tablespoons, chopped Fresh parsley (for garnish)
  • 1 loaf Crusty bread (optional, for serving)

Directions

Step 1

Heat a large pot over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the diced onion, minced garlic, celery, and carrot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 3

Pour in the vegetable broth and add the rinsed and drained white beans.

Step 4

Stir in the dried thyme, dried rosemary, bay leaf, salt, and black pepper.

Step 5

Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for 20 minutes, allowing the flavors to meld.

Step 6

Remove the bay leaf. Use an immersion blender to puree the soup until creamy and smooth. Alternatively, you can transfer the soup in batches to a countertop blender, blending until smooth and then returning it to the pot.

Step 7

If you prefer a creamier texture, stir in the heavy cream and heat through for an additional 2-3 minutes.

Step 8

Taste and adjust seasoning with additional salt and pepper, if needed.

Step 9

Ladle the soup into bowls, garnish with fresh chopped parsley, and serve with crusty bread on the side.
