Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 4 cloves Garlic, minced
  • 6 cups Chicken broth
  • 2 15-oz cans Canned white beans (e.g., cannellini or great northern), drained and rinsed
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.25 tsp Crushed red pepper flakes (optional)
  • 1 cup Heavy cream
  • 0.5 cup Grated Parmesan cheese
  • 2 cups Chopped kale or spinach
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 0.25 cup Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat. Add the olive oil and Italian sausage. Cook, breaking the sausage into crumbles with a wooden spoon, until browned and cooked through, about 6-8 minutes.

Step 2

Transfer the cooked sausage to a plate lined with paper towels to drain excess grease, leaving about 1 tablespoon of fat in the pot.

Step 3

To the same pot, add the diced onion, carrots, and celery. Sauté over medium heat until softened, about 5-7 minutes.

Step 4

Add the minced garlic to the pot and cook for an additional 1 minute, stirring frequently to prevent burning.

Step 5

Pour in the chicken broth and add the drained and rinsed white beans. Stir in the dried oregano, dried basil, and optional crushed red pepper flakes.

Step 6

Bring the soup to a gentle boil, then reduce the heat to a simmer. Allow it to cook for 10 minutes to let the flavors meld.

Step 7

Using an immersion blender, partially blend the soup directly in the pot to create a creamy texture. Alternatively, transfer about 2 cups of the soup to a blender, blend until smooth, and return it to the pot.

Step 8

Stir the cooked sausage back into the soup, followed by the heavy cream and Parmesan cheese. Simmer for another 5 minutes.

Step 9

Add the chopped kale or spinach to the pot and cook until wilted, about 2-3 minutes.

Step 10

Season the soup with salt and black pepper to taste.

Step 11

Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve warm with crusty bread or a side salad.
