  • 4 cups chicken or vegetable stock
  • 0.5 cup heavy cream
  • 2 cups fresh spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Slice the chorizo into small rounds or dice it, then add it to the pot. Cook for 5-7 minutes, stirring occasionally, until the chorizo is browned and crispy. Remove the chorizo from the pot and set aside, leaving the rendered fat in the pot.
