Ingredients

  • 2 medium Carrots
  • 1 large Cucumber
  • 1 medium Bell pepper
  • 1 cup Cherry tomatoes

  • 1 cup Sweet corn
  • 1 cup Green peas
  • 0.5 cup Mayonnaise
  • 2 tablespoons Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash all the vegetables thoroughly under running water.

Step 2

Peel the carrots and slice them into thin rounds or dice them into small pieces.

Step 3

Cut the cucumber in half lengthwise and slice into semi-circles.

Remove the seeds from the bell pepper and chop it into small cubes.
