Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 large onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 6 cups chicken or turkey stock
  • 1 cup milk
  • 1 cup heavy cream
  • 3 cups cooked turkey, shredded or diced
  • 2 medium potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 0.5 teaspoons dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil and butter in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Sprinkle the flour over the vegetables and stir well to coat. Cook for about 1-2 minutes to eliminate any raw flour taste.

Step 5

Slowly pour in the chicken or turkey stock while whisking continuously to prevent lumps from forming.

Step 6

Add the diced potatoes, thyme, rosemary, salt, and black pepper. Stir to combine.

Step 7

Bring the soup to a boil, then reduce the heat to low and let it simmer for about 15-20 minutes until the potatoes are tender.

Step 8

Stir in the cooked turkey and let it heat through for 5 minutes.

Step 9

Pour in the milk and heavy cream. Simmer gently for 5-7 minutes, being careful not to let it boil.

Step 10

Taste and adjust seasoning if needed.

Step 11

Serve hot, garnished with fresh parsley.
