  • 2 medium Russet potatoes, peeled and diced
  • 5 cups Chicken or turkey broth
  • 2 cups Frozen corn kernels
  • 1 cup Heavy cream
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Thyme leaves (fresh or dried)
  • 1 Bay leaf
  • 2 tablespoons Chopped parsley (for garnish)

Directions

Step 1

In a large pot over medium heat, melt the butter until it begins to foam.

Step 2

Add the diced onion and cook for 3-4 minutes until softened and translucent.

Step 3

Stir in the minced garlic, carrots, and celery. Cook for another 5 minutes, stirring occasionally.

Step 4

Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to remove the raw flour taste.

Step 5

Gradually pour in the chicken or turkey broth, stirring constantly to prevent lumps.

Step 6
