Ingredients

  • 250 grams Penne pasta
  • 2 tablespoons Olive oil
  • 2 units Garlic cloves, minced
  • 185 grams Canned tuna in olive oil, drained
  • 200 ml Heavy cream
  • 2 tablespoons Lemon juice
  • 1 teaspoon Lemon zest
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 50 grams Parmesan cheese, grated

Directions

Step 1

Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

Step 2

In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and saute until fragrant, about 1 minute.

Add the drained tuna to the skillet and break it up slightly with a spoon. Cook for 2 minutes to heat through.
