Ingredients

  • 12 oz fettuccini pasta
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 units garlic cloves, minced
  • 1 cup heavy cream
  • 1.5 cups grated Parmesan cheese
  • 2 5-oz cans canned tuna in water, drained
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fettuccini according to package directions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta.

Step 2

In a large skillet, heat olive oil and butter over medium heat until the butter is melted.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes, until fragrant but not browned.

Step 4

Pour in the heavy cream and stir. Let it simmer gently for 2-3 minutes.

Step 5

Stir in the grated Parmesan cheese, a little at a time, until the cheese is melted and the sauce is creamy.

Step 6

Flake the drained tuna with a fork and add it to the sauce, mixing gently to combine.

Step 7

Stir in the lemon juice, salt, and black pepper. Adjust seasoning to taste.

Step 8

Add the cooked fettuccini to the skillet and toss to coat the pasta evenly with the sauce. If the sauce is too thick, add a bit of the reserved pasta water to thin it out to your desired consistency.

Step 9

Garnish with freshly chopped parsley if desired and serve immediately.
