Ingredients

  • 2 tablespoons olive oil
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 8 medium, chopped ripe tomatoes
  • 3 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon dried basil
  • 0.5 cups heavy cream
  • 3 for garnish (optional) fresh basil leaves

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and sauté for 4-5 minutes, or until softened and translucent. Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 3

Add the chopped tomatoes to the pot and cook for 8-10 minutes, stirring occasionally, until they begin to break down and release their juices.

Step 4

Pour in the vegetable broth and stir in the sugar, salt, black pepper, and dried basil. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15 minutes.

Step 5

Remove the pot from the heat and allow the soup to cool slightly. Using an immersion blender, puree the soup directly in the pot until smooth. Alternatively, transfer the soup in batches to a countertop blender and blend until smooth, then return it to the pot.

Step 6

Stir the heavy cream into the blended soup and reheat gently over low heat, if necessary. Taste and adjust the seasonings as needed.

Step 7

Ladle the warm soup into bowls and garnish with fresh basil leaves, if desired. Serve immediately with crusty bread or a grilled cheese sandwich.
