Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 2 stalks celery, finely chopped
  • 28 ounces canned crushed tomatoes
  • 4 cups seafood stock (or chicken stock)
  • 1 cup heavy cream
  • 12 ounces lump crab meat
  • 1 teaspoon smoked paprika
  • 1 teaspoon old bay seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, garlic, and celery. Sauté for 5-7 minutes until the vegetables are softened and the onion is translucent.

Step 3

Stir in the canned crushed tomatoes and cook for 2 minutes to blend the flavors.

Step 4

Pour in the seafood stock and bring the mixture to a simmer. Let it cook for 10 minutes to develop the flavors.

Step 5

Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and puree, then return it to the pot.

Step 6

Reduce the heat to low and stir in the heavy cream.

Step 7

Add the lump crab meat, smoked paprika, old bay seasoning, salt, black pepper, and sugar. Stir gently to combine and let it cook for another 5 minutes to warm the crab meat through.

Step 8

Taste and adjust the seasoning as necessary.

Step 9

Serve the soup hot, garnished with fresh parsley.
