Ingredients

  • 2 tablespoons olive oil
  • 1 medium (diced) yellow onion
  • 3 minced garlic cloves
  • 28 ounces canned whole peeled tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon granulated sugar
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon butter
  • 4 optional (for garnish) fresh basil leaves

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced yellow onion and sauté for 4-5 minutes, or until softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, being careful not to burn it.

Step 4

Add the canned whole peeled tomatoes (with their juice) to the pot, breaking them up with a wooden spoon or potato masher.

Step 5

Pour in the vegetable broth and stir to combine.

Step 6

Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 20 minutes.

Step 7

Stir in the granulated sugar, dried basil, salt, and black pepper.

Step 8

Using an immersion blender, carefully puree the soup until smooth. Alternatively, cool slightly and blend in batches in a standing blender, then return it to the pot.

Stir in the butter until melted, followed by the heavy cream, and mix until fully incorporated.

Step 10

Taste and adjust seasonings if needed.

Step 11

Serve hot, garnished with fresh basil leaves if desired. Enjoy!
