Ingredients

  • 12 oz Pasta (penne or fettuccine)
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 0.5 tsp Crushed red pepper flakes (optional)
  • 15 oz Canned crushed tomatoes
  • 0.75 cup Heavy cream
  • 5 oz Fresh baby spinach
  • 0.5 cup Grated Parmesan cheese
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 2 tbsp Fresh basil leaves (optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to the package instructions. Reserve 1 cup of pasta water before draining and set the cooked pasta aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute, or until fragrant. If using, add the crushed red pepper flakes and cook for another 30 seconds.

Step 3

Pour the crushed tomatoes into the skillet and stir to combine with the garlic. Let the sauce simmer for 5 minutes, stirring occasionally.

Step 4

Reduce the heat to low and stir in the heavy cream. Simmer for 2-3 minutes until the sauce becomes creamy and well combined.

Add the fresh baby spinach to the skillet and cook for 2-3 minutes until wilted. Stir occasionally to incorporate the spinach into the sauce.
