Ingredients

  • 500 grams taro roots
  • 250 grams button mushrooms
  • 3 tablespoons butter
  • 1 cup heavy cream
  • 1 cup chicken or vegetable broth
  • 2 large cloves garlic cloves
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 small onion
  • 2 tablespoons fresh parsley

Directions

Step 1

Begin by peeling the taro roots and cutting them into 1-inch cubes. Be sure to wear gloves as taro can cause skin irritation.

Step 2

Clean the button mushrooms with a damp cloth or paper towel and slice them thinly.

Step 3

Mince the garlic cloves and finely chop the small onion.

Step 4

Heat a large pot over medium heat and add 1 tablespoon of butter and the olive oil.

Step 5

Once the butter has melted, add the chopped onion and garlic, cooking until fragrant and the onion turns translucent, about 3 minutes.

Step 6

Add the taro cubes to the pot and stir to combine. Pour in the chicken or vegetable broth and bring to a boil.

Step 7

Reduce the heat and let the taro simmer for about 15-20 minutes until tender.

Step 8

In a separate pan, melt the remaining 2 tablespoons of butter over medium heat. Add the sliced mushrooms and cook until they release their moisture and turn golden brown, about 8-10 minutes.

Step 9

Once the taro is tender, add the mushrooms, heavy cream, thyme, salt, and black pepper to the pot. Stir well to combine all ingredients.

Step 10

Continue to cook on low heat for another 5-7 minutes, allowing the flavors to meld together and the mixture to thicken slightly.

Step 11

Adjust seasoning if necessary and remove from heat.

Step 12

Garnish with freshly chopped parsley before serving.

Step 13

Serve hot as a main dish or as a hearty side, accompanied by crusty bread or steamed rice.
