  • 1 lb Ground beef (85% lean)
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 2 tbsp Taco seasoning
  • 1 cup Salsa (mild or medium)
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 cup Corn kernels, frozen or canned (drained)
  • 1 cup Sour cream
  • 1.5 cups Cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 3 cups Tortilla chips, lightly crushed
  • 3 stalks Green onions, chopped (optional garnish)
  • 2 tbsp Fresh cilantro, chopped (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet over medium-high heat, cook the ground beef until browned, about 5-7 minutes. Drain any excess grease.

Step 3

Add the diced onion and minced garlic to the skillet with the cooked beef. Sauté for 3 minutes until softened and fragrant.

Step 4

Stir in the taco seasoning, salsa, black beans, and corn. Cook for another 2 minutes, then remove the skillet from heat.
